Seeing this Thread Topic made me think of the first time I did Atkins a few years back & a friend shared a "LC Ziplock Ice Cream" recipe - not sure what I did with it (it was YUM) - but found this online:
Zip Lock Ice Cream:
If you want ice cream NOW, you can have delicious soft-serve ice cream in less than 10 minutes!
Chop up 2 squares from a sugar free dark chocolate bar.
Pour up to 4 ounces heavy cream into a sandwich sized ziplock bag. Add 1 capful of vanilla extract and a pack or two of artificial sweetener. I use 1 or 2 Tbl of Raspberry sugar free syrup instead. Add your chocolate (optional) and zip close.
Fill a large gallon ziplock bag at least 1/2 full of ice and add 5 or 6 Tbl of table salt or coarse salt. Put your smaller ziplock in there, seal, and shake the bag around for 5 minutes. Your hands will get cold , so wear oven mitts if you have them! Remove your ice cream bag and rinse SWIFTLY under COLD water to remove salt. Empty into a small bowl and it's ready. This is very soft serve and is very delicious. Try your own flavors or plain vanilla, but I LOVE raspberry with chocolate!
