Flax Muffins Recipe
This recipe is very customizable...this is the basics:
1 cup protein powder
1 cup ground golden flax seeds (powder)
1 1/2 sticks butter, melted
1 1/2 tsp. baking powder
pinch of salt
1/2 cup water
1/2 cup other liquid (see below)
1/4 to 3/4 cup powdered splenda (optional, according to desired sweetness)
To make awesome sweet muffins: use 1/2 cup davinci's (your choice of flavor) for the "other liquid" and 1/4 c splenda (should be sweet enough like this)
To make non-sweet muffins, use water, broth, etc as the 1/2 cup other liquid. Add to your mix: sugar-free ham, bacon, spinach, cheese, etc etc and a bit more salt. Herbs such as basil, etc also. Use shredded parmesan cheese for a lovely golden brown top! For non-sweet muffins, you'll want to use PLAIN protein powder, not vanilla! For the sweet ones, anything will work as long as it goes with your flavor.
My personal favorite is to use 1/2 c davinci's caramel, 1/4 splenda, and Several tablespoons of unsweetened cocoa powder.
Your carbs will vary quite a bit, just add it all up and devide by 12 muffins. My sweet ones are about 2 net carbs.
