Low carb Chocolate Mousse
2 cups/1 pint whipping cream
1/2 packet sf/ff chocolate pudding
Beat whipping cream in bowl for approx 1- 1/12 minutes. Carefully sprinkle in 1/2 packet of sugar free chocolate pudding. Continue beating until mixture thickens. Cover and chill in fridge, or for a fancier display, put into martini, parfait or wine glasses and chill.
Now lick the beaters....and clean up!
You can use the whole packet of sf pudding, but this increases carb count - I only use 1/2 packet which is approx 14 carbs. Don't forget to add carbs for whipped cream. Then divide by number of servings...I generally end up with 5 servings of 4 carbs each (total of 20 for the whole bowl).
