Warm cinnamon apples
Hey guys...
I went apple picking with my kids and was searching for a way to use them that would kind of mimic apple pie without all the fat and calories. I combined a few recipes with really good results..... Serves 4 4 medium apples, peeled and sliced 1 Tablespoon brown sugar 2 teaspoons cornstarch 1/2 teaspoon cinnamon 1/4 teaspoon vanilla extract pinch of apple pie spice water In a medium frying pan or medium saucepan combine 1/2 cup of water and sliced apples. Cover with a lid and cook on high for about 6-8 minutes, stirring occasionally. Apples should be tender. Drain apples, reserving the water they steamed in. In a small saucepan, combine 1/4 cup water, brown sugar, cornstarch, cinnamon, vanilla and apple pie spice over medium low heat. Stir constantly until this thickens to a thin caramel sauce. Add a little water if necessary, should it accidently get too thick. Add caramel sauce to the cooked apples, combining well. If necessary, add a little of the reserved water to the pan. Serve warm with 1/2 cup of frozen vanilla yogurt or another favorite low-fat vanilla ice cream. This dessert comes in at less than 200 calories and 3 grams of fat, depending on the ice cream used. We loved it! |
Mmmmmm. that sounds good. I make something very similar to use as a fruit topping on pancakes instead of syrup.
