Great Pumpkin Bars

  • I made these this weekend- they were wonderful! A cross between pumpkin pie and a pumpkin bar!

    1 large can of pumpkin
    1 box of spice cake mix
    1 egg

    Mix all together and spread into a sprayed 9x 13 pan. Bake at 350 for one hour. Top with FF cool whip to serve. Makes 12 large pieces at about 3 points each!
  • I've made these many times, but as muffins for my kids' class special occasions. I don't tell them they are pumpkin just "Spice Muffins" and they have no idea. They eat 'em up so fast!

    But I don' use the egg - only the pumpkin and spice cake mix. And I sprinkle a little bit of brown sugar on the tops before baking.
