    3 fluid ounces light red wine
    1/2 teaspoon grated lemon rind
    1/8 teaspoon fennel seed -- crushed

    1. In a 1-quart casserole, combine all ingredients. Cover and microwave
    on High 2-3 1/2 minutes or until heated, stirring once. Set aside until
    needed. Makes 4 servings.

    1 orange -- peeled and cubed
    1 tangerine -- peeled and cubed
    1/4 cup chopped pecans
    1/2 cup fresh orange juice
    2 teaspoons sugar
    Chopped fresh mint leaves for garnish -- optional

    1. Combine fruit and pecans. Set aside. Combine orange juice with sugar, and pour over fruit. Garnish with mint. Serves 3.

    SPARKLING FRUIT SALAD - 3 points

    2 Packages unflavored gelatin
    2 cups cranberry juice cocktail -- divided
    1 cup club soda
    1/4 cup orange juice
    1 medium banana, whole -- sliced and ripe
    1 cup granny Smith apple -- cored, peeled, and cubed
    1 cup fresh strawberries -- sliced
    2 tablespoons coconut -- unsweetened and shredded (optional)

    In a small saucepan, sprinkle gelatin over 1 cup of cranberry juice cocktail.
    Let stand until gelatin is softened, about 1 minute. Cook cranberry mixture
    over low heat, stirring frequently, until gelatin is dissolved, about 2
    minutes. Remove from heat.

    In a large bowl, combine gelatin mixture, remaining cranberry juice cocktail,
    club soda, and orange juice. Mix well. Pour gelatin mixture into a 1
    1/2-quart mold and refrigerate for 45 minutes.

    Stir banana, apple, and strawberries into gelatin mixture. Refrigerate until
    firm, about 3 hours. Invert salad mold onto a serving plate. Sprinkle coconut
    around sides of salad. Serve immediately.

    of the mold, chill gelatin until it reaches the consistency of beaten egg
    whites; then add the fruit.
