2 small apples -- pared and sliced
2 teaspoons firmly packed brown sugar -- dark

1. In blender container, combine all ingredients except apples and sugar;
process until well blended. In each of four 10-ounce custard cups,
arrange 1/4 of the apple slices; top each with 1/4 of the bread mixture,
then sprinkle each with 1/2 teaspoon sugar. Microwave on High (100%
power)4 1/2-5 minutes or until hot and sugar is bubbly. Makes 4 servings.

Apple Streusel Cake - 5 Points

1 box-10.1oz snackwell yellow cake mix
3/4 cup water
2 egg whites -- (in place of egg )
1 can apples in water -- not pie filling!
3 tablespoons all-purpose flour
3 tablespoons sugar
2 teaspoons cinnamon
1 tablespoon margarine -- (reduced fat does
-- not work)

Preheat oven to 350 degrees. Make cake batter( egg substitute can be
used). Pour batter in a 9x9 square pan or round cake pan sprayed with
nonstick spray. Take apple pieces and arrange on top of batter, pushing
them lightly into the batter--about half of the can is enough. Sprinkle
streusel topping, made from last 4 ingredients, over the apples. Cook
about 25 minutes or until a toothpick comes out clean. Let cool and serve
with light cool whip that has been mixed with cinnamon!! This cake is
moist and delicious and makes 6 generous servings. Each serving is 5
Points.

1. Spray a 9" square microwavable baking pan with nonstick cooking spray.
2. Place the apples and pears in the pan; with a vented cover, microwave on High, stirring once, until the fruit is tender-crisp, 6 minutes.
3. Meanwhile, in a small bowl, combine the oatmeal, sugar, flour, cinnamon and nutmeg. Using a pastry blender or 2 knives, cut in the margarine until the mixture resembles coarse crumbs. Sprinkle evenly over the fruit mixture.
4. Microwave on High, uncovered, until the fruit is tender and the topping is cooked, about 6 minutes.

2. Combine oats, 4 tablespoons brown sugar, and flour; cut in margarine with a pastry blender until mixture resembles coarse meal. Set aside.

3. Remove plastic film from apples. Place 3 packages apples in microwave oven; microwave at HIGH 11 minutes or until partially thawed. Spoon apples into an 8-inch square baking dish. Add remaining brown sugar; stir well. Sprinkle oat mixture over apple mixture. Bake at 375° for 40 minutes or until apple mixture is bubbly and topping is golden.

An apple a day--well, we all know what they say about apples and staying
healthy, don't we? But when you slice the apples, drench them in maple
syrup, and add a few pecans, you create a taste treat that'll inspire anyone
who tastes it to live healthy for a lifetime!

1. Arrange apple slices in an 8-by-8 inch glass microwaveable baking dish.
Drizzle maple syrup over apples. Evenly sprinkle pecans over top. Cover
and microwave on HIGH (100% power) for 3 to 4 minutes. Serve warm.
Serves 4 (1/2 Cup).

MaryD's Notes: I found almost an identical recipe that said it could be
baked at 350 for 20 minutes if you wanted to use your oven). She also
used Gala Apples and syrup with NutraSweet.

This in an excellent recipe from Simply the Best. I tried it a while ago and used the nutritional information that was provided in the book. I counted it as 4 Points.

I just entered it into MasterCook so I could post it here, and the nutritional values add up to 6 Points. I don't understand why there is such a big difference, so if any of you MasterCook detectives what to give it a shot . . .

P.S. It is even worth the 6 Points if that is what is correct.

Apple Pancake Souffle

2. In a large bowl, combine the flour, sugar, salt and cinnamon; make a well in the center. Add the egg substitute, milk and vanilla; whisk until thoroughly combined.
3. Place the margarine in a 13x9" baking dish; place in the oven until the margarine is melted and sizzling, about 3 minutes. Add the apples and mix gently to coat. Bake until the apples are heated through, about 5 minutes. Pour the egg mixture over the apples; sprinkle with the brown sugar. Bake until the souffle is puffed and golden and a knife inserted in the center comes out clean, about 35 minutes. Serve at once.

Scrape seeds from vanilla bean into a large bowl; discard bean. Add 1/4 cup brown sugar and next 2 ingredients to bowl; stir well. Add apple slices; toss well to coat. Set aside.

Combine 1/4 cup flour and ice water, stirring with a wire whisk until well blended; set aside. Combine remaining 3/4 cup flour, 1 teaspoon sugar, and salt in a bowl; cut in shortening with a pastry blender until mixture resembles coarse meal. Add ice water mixture; toss with a fork until dry ingredients are moistened. Gently press into a 4-inch circle on heavy-duty plastic wrap; cover with additional plastic wrap.

Roll pastry, still covered, into an 11-inch circle. Freeze for at least 10 minutes. Remove bottom sheet of plastic wrap from pastry; fit pastry into a 9-inch pieplate coated with cooking spray, and remove top sheet of plastic \wrap. Flute edges decoratively. Spoon apple mixture into pastry shell. Cover with aluminum foil, and bake at 350 degrees for 45 minutes or until apple mixture is crisp-tender.

Combine 1/2 cup brown sugar and next 3 ingredients; cut in margarine until mixture is crumbly. Uncover pie, and sprinkle streusel over apple mixture. Bake, uncovered, an additional 25 minutes. Yield: 8 servings (serving size: 1 wedge).

3 medium Golden Delicious apples -- (1-1/4 pounds)
each peeled and cut into 8 wedges
3 medium Granny Smith apples -- (1-1/4 pounds)
each peeled and cut into 8 wedges
3 tablespoons sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1 1/2 teaspoons margarine
1/3 can sugar
2 tablespoons water

Place the first 3 ingredients in food processor, and pulse 2 times or until combined. Add shortening and 1-1/2 tablespoons chilled margarine, and pulse 4 times or until the mixture resembles coarse meal. With processor on, add ice water through food chute, processing just until combined (do not form a ball).

Gently press flour mixture into a 4-inch circle on heavy-duty plastic wrap; cover with additional plastic wrap, and chill for 15 minutes. Roll dough, still covered, into an 11-inch circle. Place dough in freezer for 5 minutes or until plastic wrap can be easily removed.

Combine the lemon juice and apple wedges in a large bowl, and toss well. Combine 3 tablespoons sugar and next 4 ingredients; sprinkle over apple wedges, and toss well. Set apple mixture aside.

Melt 1-1/2 teaspoons margarine in a 9-inch cast-iron skillet over medium heat. Add 1/3 cup sugar and 2 tablespoons water, and cook 1 minute or until the sugar dissolves (do not stir). Cook an additional 3 minutes or until amber or golden, stirring occasionally. Remove from heat.

Arrange apple mixture evenly in bottom of skillet. Remove top sheet of plastic wrap from dough, and invert dough on top of apple mixture. Remove other sheet of plastic wrap, and gently tuck dough around edge of skillet. Cut slits in dough for steam to escape. Bake at 425 degrees for 25 minutes or until browned. Yield: 8 servings (serving size: 1 wedge).

Skim milk

1. Place apples in a 2-quart square baking dish. 2. In a small mixing
bowl, combine sure and cinnamon; set aside 1 teaspoon of the mixture.
Stir cornstarch and salt into remaining sugar mixture and mix well.
Sprinkle evenly over apples in dish. 3. In a medium mixing bowl, stir
together flour and nutmeg. Using a pastry blender, cut in margarine until
mixture resembles coarse crumbs. Sprinkle 1 tablespoon of the water at a
time, until all of the dough is moistened. Form into a ball. 4. On a
floured surface, roll dough into a 10-inch square. Cut decorative vents
in pastry. Carefully place pastry over apples. Using the tines of a
fork, press edges to sides of dish. Brush pastry with milk and sprinkle
with the reserved sugar mixture. 5. Bake in a 375 degree oven about 40
minutes or until apples are tender and crust is golden brown. Serve warm.

I know it's high in points, but it's the best cake ever! My husband ate 6 pieces last weekend. Thanks to Kelly_S for putting this though Master Cook for me.


Apple Nut Cake - 8, 10 or 16 Points

Recipe By : My Grandmother

2 cups sugar
3 cups flour
1 1/2 cups oil
3 eggs
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons vanilla
3 cups apples -- chopped
1 cup chopped pecans
1 cup brown sugar
1 stick margarine
1/4 cup milk

1. Mix sugar, flour, salt, soda and vanilla together.

2. Beat eggs before adding to dry ingredients.

4. Add salt, baking soda, vanilla, apples and pecans.

5. Bake in tube pan at 325degrees F for 1 hour, however start with cold oven.

Glaze:

1. Heat brown sugar, margarine and milk until sugar melts.

2. Pour over warm cake.

Here are two variations of a yummy, quick apple dessert. I based my variation on a recipe I got from a WW friend this week. She made the original up herself. I am unable to "leave well enough alone". Hence my 2 point variation.

Rita's Apple Delight -- 4 Points

Recipe By :Rita From the Monday 12:30 p.m. Bristol, CT Meeting

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 apple -- peeled, cored & sliced
2 tablespoons raisins
1 tablespoon light margarine
1 packet Equal® sweetener -- optional
1 teaspoon cinnamon
1 tablespoon sugar
1/2 cup water
4 tablespoons lowfat granola
1/2 cup Fat Free Cool Whip

Heat all ingredients except granola and Cool Whip in microwave until apples are soft (about 3 to 5 minutes).

Put 1 tablespoon of lowfat granola in the bottom of each of two parfait glasses.

Divide the apple mixture in half and pour over granola.

Top each serving with 1 Tablespoon of granola and 1/4 cup of Fat Free Cool Whip.

I used 2 T cut-up dried apricots for the raisins, Kashi instead of the granola, brown sugar instead of white, no Equal and Fat Free Redi-whip instead of the FF Cool Whip (it came to 2 points, 147 cals., 3 g. fat, 5 g. fiber)--- YUM! An excellent hot dessert. I didn't have any parfait glasses, so I used wine glasses.

This is a very yummy dessert that my WW buddy, Rita, "invented". I also have a 2 pt variation that I came up with. It's listed in the "notes" section, and I'll also post it separately.

4c thinly sliced Red Delicious Apples (about 2 apples)
2/3c apple juice
1/4c firmly packed brown sugar
3 tb raisins
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice, divided
1/2 tb vanilla extract
1/4 tsp rum extract
3oz marscapone cheese (I used part-skim ricotta)
1/4 c cinnamon graham crumbs (about 8 crackers, divided.
1c vanilla fat free frozen yogurt
Marscapone cheese (optional)

1)Combine first 6 ingredients and 1/2 tsp allspice in saucepan. Cook over med-low heat 20 min or until apples are tender and mixture is slightly thick. Remove from heat, let cool. Stir in remaining allspice, extracts, and 3oz marscapone.
2)Spoon 1/4c apple mixture into each of 4 parfait glasses, and sprinkle each with 1-1/2tb crumbs. Garnish with marscapone, if desired

Yield: 4 servings
7 pts, 339 calories, 11.1 g fat

Caramel-Apple Salad

4 apples, peeled, cored, diced
1 20-oz can of crushed pineapple in juice, drained
1 small pkg butterscotch instant fat-free sugar-free pudding
1 8-oz tub Cool Whip Free

Mix all ingredients thoroughly, refrigerate.

My WW leader said this stuff is 2 pts/cup, but I just made it... it made about 5 cups, and even deducting something for the discarded pineapple juice and apple peelings, I still get 17 points total, or 3 pts/cup, rounded. It is VERY rich though... a cup of this stuff may be too much for a lot of you!!
