3 Minute Chocolate Soy Cake
This is from a recipe I found using soy flour that I modified. It was delicious and it hit the spot, and doesn't have any weird taste that some people associate with soy.
For a single dessert:
1/4 C Soy Flour
1 1/2 tablespoons Cocoa Powder
1/4 t Baking Powder
5 Packets Splenda (or sweetener of choice.)
2 T Melted Healthy Margarine
2 T Water (or a little more if it seems dry)
2 teaspoons vanilla
1 Tablespoon NonFat Powdered milk
1 Egg
How To Prepare: In 2-Cup Pyrex baking dish blend the flour, cocoa, baking powder, splenda, dry milk.
Then add water, melted margarine, egg, and vanilla. Blend thoroughly with fork. Microwave for 2 minutes... stick knife through it to see if it's dry or to slightly moist. Let set. If you feel the need to microwave more, do it for 3 minutes. I microwaved it for 3 minutes and it was a bit dry but still tasty.
NOTE: I topped with drizzled agave nectar. You could top with SF syrups, SF cool whip, SF fruit preserves, peanut butter, etc.
