1 cup whole milk ricotta cheese (for sbers, use reduced fat or ff)
1 tablespoon powdered sugar
grated peel of 1 lemon
1 1/2 cups fresh blueberries
1. Combine ricotta cheese, sugar and lemon peel in medium bowl; stir well.
2. Place 3 tablespoons blueberries in each of 4 parfait glasses. Add 1/4 cup ricotta cheese mixture; top with another 3 tablespoons blueberries.
Tip: Garnish with lemon peel, or, sprinkle 2 teaspoons slivered almonds or chopped pecans on parfait for an additional 1 g carbs.
