I got this wonderful recipe from my daughter. It makes a great addition for a brunch finale, or anytime you're craving something light and refreshing.
Orange Ricotta Cremes
1 orange per person
1/2 cup or so of lowfat or fatfree ricotta per person
1/4 cup sugar-free orange marmalade per person
Peel oranges and cut into segments (between the
membranes, you do not want to include any membrane) -
squeeze the rest of the juice from the membrane into the bowl
with the orange sections. Add marmalade and stir to combine.
Spoon ricotta into individual dessert dishes and top with
oranges and liquid.
