Crustless Peanut Butter Pie
Made this last night in an attempt to satisfy a craving for peanut butter cups and/or ice cream... it was soooo yummy! Even my husband loved it.
2 8oz packages neufchatel cheese
1 cup splenda
1.5 cups natural peanut butter
Mix all of these together until creamy and smooth. It helps to let the neufchatel soften a bit beforehand.
Finally, fold in 2 cups of lite whipped topping. Smooth into a pie pan or square pan and freeze for a few hours. Then slice it up and serve!
