Accidentally posted this into Phase 1 entrees and THEN saw the link for Crockpot/Slow Cooker. Whoops!
This is something I just tossed together and I HOPE it ends up as good as it sounded when I threw it in the crock! I also hope I'm right about it being okay for Phase 1. It seems to be but I'm just starting and get worried I'm overlooking something.
12 ounces extra lean stew beef, cut into cubes
3 Tbs flax meal
1 tsp Mrs Dash Table Blend
1 small zucchini, thinly sliced (about 4 ounces)
1 small eggplant, cubed (about 6 ounces -- I had some already blanched in the freezer that I defrosted -- don't know if that matters)
1 14.5 ounce can diced tomatoes
In a medium size bowl mix together flax meal and Mrs Dash. Add beef & mix to coat well. Place in bottom of crock. Add zucchini, eggplant and tomatoes. Cover & cook on high 4-6 hours or low 10-12 (I'm assuming based on other recipes/previous experience).
