Crockpot Pulled Pork BBQ

  • Into large crockpot place the following:

    1 2lb. pork tenderloin

    Liberally salt and pepper the top of the meat.

    Around the meat place the following:

    1 medium onion, peeled and quartered
    4 cloves garlic, peeled


    Pour 1/2 cup water and 2 tsp. liquid smoke seasoning into crockpot. Cover with lid and turn on crockpot to LOW and allow to cook for 6 hours undisturbed.

    After 6 hours check to make sure meat is done and tender. It should pretty much be falling apart at this point and there shouldn't be too much liquid in the bottom. If there's more than a half cup or so, ladle off excess. With two meat forks, pull the meat apart into chunky shreds and toss well with the remaining cooking liquid.

    Pour 3/4 of a bottle of low carb BBQ sauce or 1-1/2 cups homemade low carb BBQ sauce over meat, toss and allow to cook for another 1/2 hour or so on low or use "Keep Warm" setting on crockpot if you have it.

    Serve hot with whole grain garlic toast and a veggie.

    I made this last night.. Served it over Garlic Toast fer DH, and I had it as is with a salad.. Easy and tasty!
