One of my favorite meals is my mom's pot roast. She makes it in the oven w/ the lipton onion soup mix, carrots, potatoes, and a can of golden mushroom soup. Since the golden mushroom soup and potatoes aren't exactly SB friendly, I adapted the recipe a little and threw it in the crock pot. This is what I did...
Large pot roast
2 packages of Lipton Onion Soup Mix
2 cups of water
A couple of handfuls of baby carrots
1 package Great Value (Wal-mart brand) asparagus stir-fry
Salt
Pepper
Garlic powder
I seasoned the roast w/ salt, pepper, and garlic powder on each side before putting it in the crock pot. I put the roast and stir fry in frozen and put it on high. When I woke up about 6 hours later it was nice and tender. I added a little more salt, pepper, and garlic powder to the mixture and then put it on low and let it cook a couple more hours.
It's not my mom's pot roast (nothing ever is, LOL)...but it was good and very filling. Plus it was SUPER easy.
