I want to make a recipe that I found in clean eating magazine (an almond butter cookie) and it calls for sucanat. I don't have that but I do have organic evaporated cane juice (for those that don't know, its not a juice). Would that be okay or does anyone have a conversion chart anywhere? I've been searching on the web but have been getting more questions than answers. Thanks.

According to the wikipedia Sucanat IS organic evaporated sugar cane juice (so there is no conversion involved they're the same thing, so you use what the recipe calls for).
I'm guessing Sucanat is just a brand name.
