Does anyone have experience or information on using things like bulgar or quinoa as breading for eggplant, chicken, etc.?

I don't know about either of those but I have used wheat germ for a breading for chicken before. Works fine I prepare it exactly as I would with bread crumbs but I add lots and lots of seasonings.

I love this idea--fantastic! Thanks for that.

I have tried almond powder on fish and it was really good. I just put my raw almonds through my coffee grinder (only used for flaxseed) and lightly dredged my filets into the powder. Super YUM!
