Gar Gum

  • Does anyone use Gar Gum for thickening? I've not had the best of luck using it for homemade pudding or anything you have to cook but it works fantastic for uncooked salad dressings. 1 teaspoon has 10 calories, 1/2 tsp. will thicken one cup of liquid.
    A couple of days ago I modified a recipe for peanut sauce and it worked well in that but then it wasn't cooked either.
    If you do use it, please post some recipes that work well for you.

  • I'd love to know what to do with guar gum. I have a bag of the stuff in the cupboard. I once used it in a smoothie to give it a nice thick texture.

    This is the recipe I modified using PB2 and guar gum. The PB2 makes it really low in calories.

    PB2 Sauce
    8 servings of 1 oz @ 35 calories
    48 grams of PB2
    Mix Pb2 with water to make paste
    4 T. Soy Sauce
    3 servings Ginger (12 grams)
    1 t. Splenda
    ¼ cup Rice Vinegar
    2 t. Chili powder
    Dash Cayenne
    ½ t. Gar gum
    Add water to make 8 oz. when completed
    Whisk together in covered jar.
