Almond Flour....
 
Anyone use it? I just purchased a 5 lb bag and I need inspiration! I found this recipe but I was hoping to use it in more main dishes if possible.


Low Carb Muffins

Ingredients:

* 2 cups almond flour (almond meal)
* 2 teaspoons baking powder
* 1/4 teaspoon salt
* 1/2 cup (1 stick) butter, melted
* 4 eggs
* 1/3 cup water
* Sweetener to taste -- about 1/3 cup usually works well -- liquid preferred

Preparation:
1) Preheat oven to 350 F.

2) Butter a muffin tin. You can really do it with any size, but I'm basing the recipe on a 12-muffin tin.

3) Mix dry ingredients together well.

4) Add wet ingredients and mix thoroughly (You don't want strings of egg white in there and you don't have to worry about "tunnels" when you are using almond meal).

5) Put in muffin tins (about 1/2 to 2/3 full) and bake for about 15 minutes.

I found a recipe on Kalyns Kitchen to use it for chicken nuggets. Worked great for me.

Thanks for posting this, maybe I can get my 3 yr old to eat healthier chicken nuggest since that is all she wants. Def going to try this one out. :smug:

What do you think about making a lot of these and freezing them?

I use almond flour to make crusts, (I used it to make a crust for a fat free sugar-free cheesecake.)

It also makes a great coating for fish and chicken and even shrimp.

You can make several baked goods with it.

Just remember, if you use almond meal, don't have a serving of nuts that day. Make sure you're not consuming more than 1/4 cup (or whatever the serving amount is on your package. I use Bob's Red Mill and the serving size is 1/4 cup.)
