Default Tom Kah soup - can I?

I am on the induction part of Atkins. Can I have Tom Kah soup?

It has coconut milk, mushrooms, peppers, lemon grass, Tom Yum paste.

Funny you should ask since I'm sick and that's my ultimate comfort food.

However, it's doubtful. The best advice I can offer is to do a google search for Tom Kah soup and then look at at least 4 that offer nutritional values so you get a rough idea of the carb content. As I recall, it's relatively high.

Leenie - didn't you post a recipe for low carb tom kah soup a few months ago? I think it got lost in the great crash of '04. Can you post it again?

Ok, since I can't pass up a good research opportunity, I went and checked it out.

It seems that Tom Kah runs between 10 and 20 grams of carbs per serving with around 2 grams of fiber. So that's 8 - 18 grams of carbs. It's better to go high on your estimate than low, so I'd probably count it at 15 grams of carbs per cup.

That's definitely too high for induction and is probably more appropriate for an occasional meal once your in pre-maintenance or maintenance.

Ok, now I must know!

Here's the most common recipe for Tom Kah soup. Can someone with the PC version of fitday please plug it in and see what it comes to? PLEASE PLEASE PLEASE????

2 14-ounce cans light unsweetened coconut milk*
3 cups canned chicken broth
2 cups thinly sliced mushrooms
6 tablespoons finely chopped lemongrass*
1/4 cup fish sauce (nam pla)*
2 tablespoons minced fresh ginger
1 serrano chili, sliced into rounds
2 teaspoons chili-garlic sauce*
8 skinless boneless chicken thighs, thinly sliced
1/2 cup thinly sliced green onions
1/4 cup thinly sliced basil
3 tablespoons fresh lime juice

Makes 6 servings.

Nope, the only soup I've ever cooked was minestrone and that even sucked. I suck at cooking soup, honest
