Hi! I am new here. I usually hang on the calorie counting board but I'm thinking of trying Atkins. My husband did Atkins for almost a year and lost 130 lbs. (he started over 400 and is not at his goal weight yet) so I already know alot about what to eat. He went off it for a few months due to pain (unrelated to atkins but when you are in constant pain the diet goes out the window) and in the 3-4 months he's been off of it he's only gained 5 lbs but he wants to get started on it again once he returns from the Mayo clinic (he's up there for 3weeks for treatment). He followed Phase 1 six days a week and then for ONE meal he would cheat each week (usually pizza lol) and he still lost a ton of weight but again he had a lot to lose.
I thought maybe i'd do it with him this time around. Before I did the same dinner and snacks as he did everyday but I'd have cereal or oatmeal for breakfast and my usual lunch which is a lean cuisine or a soup and yogurt or something like that. My husband wasn't working when he was on it so he as able to make lunches at home but I'm at work so i have access to a fridge and a microwave but I tend to like lunches I can just throw in my lunchbox and be good to go.
Any ideas on low carb easy or ready to eat lunches to take to work?
