I got to eat lasagna last night. My hostess made a "normal" lasagna but used thinly sliced eggplant instead of noodles. I am NOT a fan of eggplant, but this was delicious. She salted the slices she said so they wouldn't be too watery.
A lovely recipe and such a pleasant surprise to have my needs taken into account.

The eggplant didn't have much flavour, just took on the flavours of the rest of the lasagna. Although I am not a big pasta eater, I do miss lasagna, so it was really nice. No weight gain on a weekend away, with a few cheats since we were drinking and playing cards etc. Eating right helped a lot.

I have been making lazy-on-ya ( as my 4 yr old calls it) for years now with either eggplant or zucchini--love it. I slice the veg thin lengthwise add some salt, place between 2 kitchen towels and put the pan on top for about a hr. to get rid of the excess water then make as u would ususally.Here is a link I used as a guide http://www.food.com/recipe/i-lost-my...-lasagna-83464
