Default breakfast oatmeal

I have been reading ideas and recipes for breakfasts. I can manage atkins style stuff and couple of times a week, but I am struggling to eat enough at breakfast on a regular basis. I can adhere to low carb rest of the day.
How about carbs mostly at breakfast. I am thinking of steel cut oats cooked in low fat unsweetened soy milk. Having something low glycemic and high fibre like this, is that a do-able thing? Alternating that with atkins type breakfasts?
Or are you just gonna tell me to stick it out and it will get better?

I think that would depend on a few things. Are you truly doing Atkins? If so, what phase of Atkins? Also, when you say you can manage "Atkins-style" stuff....what exactly are you eating for breakfast? Inquiring minds want to know

i just can't face eggs everyday. SO have been having meat or cheese, with eggs a couple of times a week. Today I had leftover chicken from last night's supper. Maybe I could do atkins bars. This is the part of the day when I really want carbs, to jump start the day. So I working to atkins, while reading reading reading. I am mostly working thru the diabetes revolution book since I am now prediabetic and want to be lower carb so that I can control blood sugars and not go over into true diabetes.

Not meaning to sound like a nudge...but...STAY FAR AWAY FROM THE ATKINS BARS! I realize the label says "appropriate for Induction" but, if you are truly wanting to do Atkins, those bars are a detrimate. They clearly contain ingredients like soy, milk & peanuts, none of which are on any acceptable foods list I've ever seen. And the carb counts don't add up. The labels say 2 or 3 net carbs per bar....but, when you investigate the back of the label and you take the total carb count and deduct the dietary fiber, it does not equal 2 or 3 net carbs. Since Dr. Atkins death and Atkins Nutritionals Inc. taking over, a lot has changed. When Dr. Atkins created those bars, they were meant for emergencies when no other low carb food was available however, they were not intended for everyday. I ate oatmeal every day in winter (and a lot of the summer too) for years and years. It's been hard to give it up, but the carb load is just too high for serious carb reduction diets, at least in the weight-loss stage.

I too cant face the smell of eggs every morning. Like you I eat ham, cheese etc sometimes, and I do make fried or scrambled eggs a few times a week. One thing that really worked for me was making crustless quiche (similar to recipe posted by Kim above, although I do lots of different ones based on my mood & my fridge). I found that having that already made so I just need to microwave a slice of it was a really good solution for me. It keeps for about 3 days in the fridge & if there is any left after that I freeze it in slices & it needs a little longer in the microwave. It turns into a good snack too, and my husband (who is French) likes quiche for dinner with a salad & is really happy with the crustless versions which is all I make. I know it's mainly eggs, but it somehow doesnt smell so eggy so I don't have the same problem with it, and it's become a grab-and-go breakfast for me.
