Smile Homemade Maple-Almond Granola

I've been making granola since I was 12. I love it!! I don't think raisins are SBD approved so I left them out but if you're in the mood to splurge, they are really good. I don't make it often since I could eat it 24/7 but I've found that 1/4 cup over yogurt gives a good "granola fix" without overdoing it too much.

4 C Old fashioned oats
1 C sliced almonds
1/2 C unsweetened shredded coconut
1/2 T cinnamon

1/4 C smart balance
1/2 C sf maple syrup (I use Log Cabin)
1/4 C canola oil
1/2 C splenda (or to taste, I like sweet granola)
1 T maple extract
pinch of salt

Preheat oven to 300. Toss first four ingredients in a very large bowl. In a saucepan, combine remaining ingredients and melt together over medium heat. bring to a soft boil then pour over the oat mixture. Toss very well to mix together. Make sure all the oat mixture is coated. Spread mixture on a cookie sheet, crunching with your hands to make clumps. Bake for about an hour, stirring once halfway through.

8 servings. 290 calories per serving.

Default Schatzi Rates 4 Chef Dude hats for Yumola Granola!

Hey Man, I'm groovin on some Yumola Granola.... Time trippin back in time to my days of my "Yoot" in the 60s/70's... THE BAND is playin as I munch out in my peasant dress and mocassins... man.

The receipe is A B C DElish!!!!!!! and Easy...and much cheaper, tastier than that hard as rock crap you buy!! I give you 4 Chef dudes

I cut the splenda to 1/3 cup... as I am not big on real sweet things..and just a hint of sweetness hits the spot... Cut the almonds down to a 1/2 cup,since nuts are a big trigger for me...replaced them with Sesame and flax seed mix... Only took 40 mins in my 'lectric oven...made 2 cookie sheets worth, sprayed with pam before hand..

Schatzi: Thanks for the the passing along the tip about finding unsweetened coconut in the frozen food section. I'll look today, I'd gone several places and hadn't been able to locate it.

I am wondering what smart balance is? I live in Canada and have never seen this product. Is there anything similar to this?? Thanks.

Smart Balance is butter type spread-like margarine but made with non hydrogenated oils and supposedly high in Omega 3 and the good stuff. And it does taste like butter, it doesn't melt as well but hey can't have everything. http://www.smartbalance.com/nutrition/whydifferent

Any idea how long this keeps for in a plastic container?
