Default breakfast layered sandwich

Over the weekend, I thought I was having company so I bought several loaves of bread to make sandwiches. Then when I got home I found that company had canceled.

Fortunately some of it was round sourdough bread. I made this sandwich type thing and have been eating it all week. It taste pretty good.

All these amounts really depend on how big your sourdough bread is.

6 eggs
splash of milk
spices of your liking
beat together then lightly scramble. They should still be runny.

9oz package of fresh spinach
1/2 small onion, sliced thinly
1/2 red sweet pepper, sliced thinly
cook onion and pepper until soft, then add the spinach until wilted.

6 slices turkey bacon cooked

Cheese of your liking-2-3 slices

1 loaf round sourdough bread

2 T or so of lf or fat free cream cheese softened

cut the top layer off the sourdough bread and scoop out the bread leaving a shell or bowl about 1/4-1/2 inch. Spread the cream cheese around the inside of the bread.

layer:
the soft scrambled eggs into the bread bowl, patting down tightly with spoon
turkey bacon push down tightly
spinach/veggies push down tightly
cheese on top. or where ever you would like it.

Place the lid back on the bread and sort of squeeze it tightly, wrap with plastic wrap or aluminum foil tightly and place in the fridge. The next day, I sliced into 6 slices. Heated one in the microwave for a minute and it was really good. Wrap up the other 5 pieces and place it back in the fridge.
