Apple Pancakes - Phase II & III

  • Apple Whole Wheat Pancakes
    Makes 8-10 Pancakes

    1 1/4 c. whole wheat flour
    1/4 c. Spenda
    1/2 tsp. salt
    1 1/2 tsp. baking powder
    1/4 tsp. baking soda
    2 tsp. cinnamon
    1/2 c. water
    1/2 c. skim milk
    2 large eggs or equivalent egg substitute
    1 apple, peeled, cored and chopped

    Mix all ingredients except apple together until just wet (don't overmix...pancakes will get tough). Gently mix in apple. Batter will be lumpy. Pour onto pam sprayed skillet or griddle. Cook till bottom is lightly browned. Flip and cook till lightly brown.

    Serve with sf maple syrup....even better if cinnamon is added to syrup and heated in saucepan till warm.
