1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 small onion, sliced super thin
1 tablespoon of olive oil
1 sweet potato, washed and sliced thin (I use the food processor)
salt and pepper to taste
Add olive oil to pan and heat on medium. Add onion and peppers and saute for 5 minutes. Add the sliced sweet potato. And finally the spices and cook until tender, or the potatoes brown up a bit.
(I found that if I heat for a few minutes then add a bit of water and cover for 3 minutes, the potato steams a bit and cooks faster. Then I uncover and proceed)
