3/4 cup fat free liquid egg substitute
2 tablsp water
3 tblsp nonfat dry milk
1 tsp minced garlic
1/2 tsp each dried basil & oregano
1/4 - 1/2 tsp red pepper flakes
1/3 cup lowfat turkey pepperoni or fat free soy pepperoni
sliced onions, olives, mushrooms, tomatoes, peppers, etc, etc
1/2 cup 2% mozzarella shreds, divided
1/3 cup no sugar (low carb) spaghetti sauce
2 tsp extra virgin olive oil
Preheat oven to 350 degrees.
In an oven-proof skillet, saute garlic and however much sliced onions and fresh mushrooms and peppers you wish until soft. Add pepperoni and other pizza topping ingredients - fresh tomato goes in at this step. Stir, remove from heat and set aside.
Combine egg substitute, water, herbs, red pepper, nonfat dry milk and 1 tablsp of the cheese. Blend well and add to oven proof skillet. Bake until set - check after 10 minutes. When eggs are set, top with sauce and remaining cheese. Continue baking until bubbly.
