I have made it now with turkey bacon and Canadian bacon. I must say Canadian bacon wins hands down.

I made the SB book version of this... came out really spongy - not in a good way. Any tips?

I used to make these when I first started SB. I don't remember them being spongy. Did you reheat them in a microwave? I know when I did I didn't care for them as much. The toaster oven seemed to work better. I used turkey sausage crumbled, crushed red pepper, spinach or zucchini with shredded cheddar on top. I think I added a little milk too, but I am not certain.
