Default Something different- brussel sprouts

So, hear me out. I know this sounds strange. I originally made this as a side dish with dinner, but then realized it would make a really good breakfast- with or without eggs.

2 slices turkey bacon (confession: I use center cut lean pork instead)
2 cups sliced or shredded brussel sprouts
1-2tblspoons apple cider vinegar
pinch of splenda or other OP sweetener
pinch of salt

Cook up your bacon in a pan, remove and chop. Add shredded brussel sprouts to the same pan and cook just a few minutes until slightly wilty, but still crisp and green (you may need to add just a little bit of oil) Mix apple cider vinegar with Splenda to taste- you want it to be tart, but not as tart as straight vinegar. Toss this with the brussel sprouts, the chopped bacon, and just a shake of salt. Ta- da!

This is delicious as is, but makes an amazing breakfast with a fried egg (slightly runny yolk) on top.

It's nice and hearty, very filling, and, pretty quick to cook up. Plus, even though the brussel sprouts are nto your avergae breakfast, the bacon gives it a nice breakfast feel, and it is a nice welcome break from eggs.

I haven't used brussels, but I make this with shredded cabbage. It's very good.

I have never had brussels sprouts, and feel like I may need to end that. Don't they taste like a mild cabbage? I love cabbage!

And I made it this morning. Pretty good. I used chopped ham instead of bacon. I had two poached eggs on top. Yummy.

Good morning to all..
I tried brussel sprouts last night. I cut them in half and sprinled them with salt, black pepper and a touch of olive oil. Placed them on a baking sheet and put them if the often for about 15-20 mins at 350 dgrees. After 15 minutes or so took them out of the oven and sprinkled them with Apple cider vinger and a little crumbled feta cheese. I served them with 2 eggs that are cooked over and easy... Yumm

I LOVE brussels sprouts. I love them with crumbled gorgonzola. It doesn't take a lot and it is delicious. I'll have to try them for breakfast some time!

I LOOVE Brussels they have been my fave since childhood. this would be awesome with coleslaw mix tho (You don't want me chopping anything)
