Mock Oatmeal 2
The other day I was eating a snack of half a cup of RF cottage cheese with a bit of splenda and cinnamon and realized the taste and texture was just like that of oatmeal! Could be heated and served for breakfast. I know there is already a Mock Oatmeal using ricotta so I posted this as "Mock Oatmeal 2."
1 cup reduced fat or fat free cottage cheese
teaspoon cinnamon (or to your liking)
packet or packet and a half of splenda or other sweetener (to your liking)
Mix together and microwave for a min.
You could pair the 1/2 cup version with scrambled eggs, or with fruit in Phase 2, or enjoy a hearty "bowl" of "oatmeal" with the 1 cup recipe above.
