2 cups Eggbeaters
1/2 cup Lowfat Cottage Cheese
1/2 cup 2% shredded cheddar cheese
1/4 cup chopped onions
1 cup broccoli florets
1 tsp canola or olive oil
1/8 tsp ground black pepper
Start with a pan on med high heat then add the oil then the onions tenderize for about 5 min then add the broccoli heat for 5 min mixing well with the onions. Then spoon into a sprayed glass pie pan then mix the rest of the ingredients together and pour over broccoli (I use enough broccoli to cover the bottom of the pie pan). Then bake at 350 for 45-50 min.
Serves four.
This is great for breakfast on the go I can make these on sunday and have for breakfast every day until the end of the week. I vary this up and add turkey sausage or lean ham
