So my husband made breakfast for us this past weekend. He doesn't cook often but when he does its usually pretty decent. We didn't have any ham or canadian bacon left so instead of those he put turkey pepperoni in the scrambled eggs along with a little bit of 2% shredded cheddar. I was a bit skeptical but they were the best eggs I've had in my life. So here is the recipe that serves 2
17 slices Turkey Pepperoni diced into small pieces
1/4 cup LF shredded cheddar
1/2 TBS Smart Balance
Mix eggs and cheese in a bowl. Heat skillet over medium heat and melt smart balance. Add eggs and cheese and scramble. Add sliced pepperoni and cook to desired doneness.
That simple. I think next time he makes these I'll get him to add tomatoes, onions, and green pepper. That way we have a pizza scramble. Its delish!
