I once saw Rachael Ray recommending cream cheese in your scrambled eggs, so I tried it today. It was Yum-o as Miss Ray would say. And it's very quick and easy yet doesn't have the same old boring taste of regular scrambled eggs.
2 teaspoons fat free milk
2 tablespoons cream cheese
salt and pepper to taste
Smart balance, half tablespoon or to your liking
Scramble the eggs, milk, cream cheese and salt and pepper in a bowl. In the meanwhile, heat the smart balance til it's melted over medium heat. Turn the heat down to medium low, and pour the eggs in. Stir constantly until thick and fluffy yet creamy scrambled eggs have formed. Serve and enjoy.
A variant on this
that I was thinking of was sauteeing onions and garlic and adding it to the scrambled egg and cream cheese mixture, and chop up a bit of parsley to throw in as well. I think it'd be superb!
