Crustless Spinach Quiche

  • I am getting slightly tired of the same old scrambled eggs for breakfast every morning (I'm on P1) and have been wondering what else I can eat. I was looking for some recipes for next week's dinners, and came across a quiche recipe. I have no idea why I didn't think to eat quiche earlier, since I loved it before SB! I found a recipe online that just happens to be crustless (yay!), and it had 5-star reviews. I am going to try it asap!

    1 tablespoon vegetable oil
    1 onion, chopped
    1 (10 ounce) package frozen chopped spinach, thawed and drained
    5 eggs, beaten
    3 cups shredded Muenster cheese (use LF, or any other kind of LF cheese you want)
    1/4 teaspoon salt
    1/8 teaspoon ground black pepper

    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
    Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
    In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
    Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

    I also saw another recipe that used basically the same ingredients, and the only difference was that you line the bottom of the pie pan with cheese slices, and then after you spoon the mixture in, you put more cheese slices on top. It makes a nice crunchy crust that's very SB friendly! I am going to experiment and see what works best.
