Spinach, Broccoli, Zucchini & Swiss Quiche
Ingredients (Serves 9)
For the crust :
1 cup almond flour
½ cup flax meal (You can skip this and just use 1 ½ cup almond flour instead)
¼ cup butter, melted
1 tsp salt
For the filling:
1 small onion, diced
1 small zucchini, shredded
1 small bunch of broccoli, cut into small pieces
2 cups fresh spinach
1 cup swiss cheese, grated (I used regular fat)
¾ cup low fat milk (I used 1%)
salt & pepper to taste
Directions: Preheat the oven to 400*
For the crust, melt the butter in a bowl and add the salt, almond flour and flax meal. This will form a crumbly mixture. Pour it into 9x9 glass dish, and gently pat it down. No need to pre-bake!
For the filling, spray some Pam on a non-stick pan and brown the onions. Meanwhile, steam the broccoli, shred the zucchini (or cut it up, if you prefer), and shred the cheese. Steam the spinach in the microwave so it becomes wilted. Combine all the veggies and cheese in a bowl. In another bowl, whisk the eggs and the milk. Combine the two mixtures. Add another egg if needed. Add salt and pepper.
Pour the mixture over the crust. Bake in the oven at 400* for approximately 45 minutes.
