Last night I put squash, zucchini (yuck!), onions, mushrooms, tomatoes and carrots in the grill wok without oil and "fried" them up.
This morning, I finally diced a bunch of the leftovers (0 points), scrambled them into an egg and 1 egg white(2points), added a WWs mozzarella string cheese (1 point) on top to melt in. A dash of hot sauce and a little salsa completed it.
It was a huge plate (relatively -- certainly not as huge as I used to eat - hence how huge I am now) and all the flavors really satisfied. Let's hope it holds.
