Default

Preheat Oven to 425.
Spray 9 X 13 pan with Pam

Mix together:
Eggbeaters equivalent to 2 eggs
1/4 cup Lite Maple Syrup
1 T Splenda
3/4 cup 1% Milk
1-1/2 cups LF Bisquik

Cover bottom of pan with:
1-1/2 cup fresh blueberries (optional)
Pour batter over berries. (Batter will barely cover, but that's OK)
Bake 10-15 minutes, till toothpick comes out clean.

Top with:
1 cup 2%Kraft shredded cheddar cheese
12 pieces LF bacon, crumbled (I use Gwaltney LF Bacon, 2 slices = 1 pt) Cooked sausage may be substituted.

Return to oven 1 minute to melt cheese.

Serve with more syrup, if desired, or just drizzle a little more over whole thing.

Serves 6.
250 calories, 3.5g fat, 2g fiber = 5 points (including 1/8 cup extra syrup on top per serving)

Great for serving a crowd since make all at once, no flipping. Would make wonderful Valentine Breakfast, or excellent brunch dish. Hope you enjoy.

Default French Toast

Not sure what category to put this....

4 slices WW bread (2 pts) ( use the white)

1/4 cup egg sub. (1 pt)

cinnammon and 1 tsp vanilla or almond extract (0pts)

spray a non stick pan with butter flavored PAM

mix the egg sub and the cin and extract in a shallow dish, put the slices of bread in until both sides are covered (you'll have to turn them) and "fry" in the pan until the outside of the bread is a bit firm...

I use sugar/fat free syrup (0 pts) and just a teaspoon of powdered sugar, just enough for a sprinkle with doesn't even equal 1/2 tsp over the top...

Awesome for a 3 pt breakfast and 4 slices of bread is great!!!!

Thumbs up stuffed french toast- taste like a snicker bar to me

I came up with this recipe the other day, and I swear that to me it taste just like a snicker bar...but then I haven't had a snicker bar in a while so don't quote me on that one, but I can dream can't I!

Ingredients:
2 slices light bread- I prefer the Sara Lee Deelightful whole wheat and honey the best.- 1 pt.
1 serving of egg beaters for dipping- 1 pt.
1/4 cup of 1% milk for dipping- 1 pt.

French toast filling:
1 t. reduced-fat peanut butter- 1 pt.
1/2 banana, sliced- I counted as 1 pt.
10 - 15 chocolate chips- 1 pt.

Directions:
Beat egg beaters and milk for dipping, spray pan with cooking spray and heat up, dip bread in egg/milk mixture on both sides and place in pan. Brown on both sides. When second side is browned, start spreading peanut butter, bananas and sprinkle chocolate chips on one slice of the french toast, then place the other toast on top and press down firmly, flip a few times to warm the peanut butter and bananas and melt the chocolate chips then serve.

I sprayed some 'I can't believe it's not butter' on the toast and poured small amount of sugar free syrup on top (not the full 1/4 cup serving size so didn't count the syrup as points).
Try this recipe and let me know if you think it tastes like a snickers ok.
Enjoy!!!!

Default Pineapple Upside-Down French Toast

POINTSŪ Value | 3
Servings | 4

Ingredients

2 large egg white(s)
1 large egg(s)
2/3 cup fat-free skim milk
1 tsp vanilla extract
4 slice whole-wheat bread
1 tsp canola oil
8 tsp unpacked brown sugar, divided
4 canned pineapple slices (rings) in juice, drained

Combine egg whites, whole egg, milk and vanilla extract in a large, deep bowl. Soak bread in egg mixture for about 1 minute; set aside.

Heat oil in a 12-inch nonstick skillet over medium heat until sizzling; place 2 slices of bread in a single layer in skillet. Spread 2 teaspoons of sugar over each piece of bread; cook bread until well-browned, about 4 to 5 minutes. Flip bread over; cook until well-browned on other side and sugar is melted, about 2 minutes more. Flip bread over again; place a pineapple ring on top of each slice. Flip bread again; cook until pineapple is warm, about 2 to 3 minutes. Set aside and cover to keep warm; repeat with remaining ingredients. Serve immediately. Yields 1 slice per serving.

Default French Toast

1 (8 oz.) Carton Egg Substitute
1/3 Cup Skim Milk
1 teaspoon Cinnamon
1 teaspoon Vanilla Extract
12 Slices Reduced Calorie Whole Wheat Bread

Preheat oven to 400 degrees. In a shallow pan or bowl, combine the egg substitute, milk, cinnamon and vanilla. Dip each slice of bread quickly into the mixture to coat both sides, then place on a cookie sheet sprayed with non-stick cooking spray. Bake each side for 3 to 4 minutes.

Note: you can also cook each slice in a skillet over medium heat if you don't want to make all of the slices at once. I just bake mine because it takes too long to cook 12 slices of bread in a skillet. By baking them, the whole family can eat at the same time.
