Sugar Free Raisin-Walnut Muffins
I found this recipe in Country Living, Official Publication of Ohio Electric Cooperative, Vol 47 No 6 (March 2005), Page 31. The recipe was written by Jennie Sanford of Sidney.
This is really good! 2 c. all purpose flour 1 ½ tsp. baking powder ½ tsp. baking soda 1/4 tsp. salt ½ c. raisins ½ c. chopped walnuts 1 large egg, slightly beaten 1 c. unsweetened applesauce ½ c. orange juice 3 Tbsp. canola oil In medium mixing bowl, combine flour, baking powder, baking soda, cinnamon, salt, raisins and walnuts. Make a well in the center of dry ingredients. In a small mixing bowl, combine egg, applesauce, orange juice and oil. Add all at once to dry ingredients. Stir until moistened. (Should be lumpy.) Spray 12 muffin cups with non-stick coating or line with paper cups. Divide batter evenly among the cups. Bake in 350 degree pre-heated oven 20 minutes or until golden. Yields 12 muffins. Editor's note: Applesauce and orange juice have natural sugars. |
