Ok, so I want to start off with the fact that you should not be eating these everyday BUT they are no worse than an Atkins bar (actually much better) and they are FRESH!! There are some days that I just really want something indulgent and "legal". So, I tweaked the One Minute Flax Muffin Recipe to suit my needs. You cannot even detect the flax in this!!
Tiffany's Low Carb Chocolate Chip Flax Brownie Recipe
Ingredients:
1/4 cup ground golden flax seed meal *
1 1/2 - 2 1/4 T Vanilla Whey Protein (I use designer brand)**
dash salt
1/2 tsp baking powder
1/4 - 1/2 tsp decaf coffee granules
1 tsp cocoa powder
1 egg (I used medium but large should be fine)
1 T olive oil
1 T Torani SF vanilla syrup
1 1/2 - 2 T Torani SF chocolate syrup
10 - 12 Sugar Free chocolate chips or Dark chocolate chips
* If you want a moister brownie then use slightly less than 1/4 cup flax meal
** If you want a more "cakey" texture (and slightly less moist) brownie then use 2 to 2&1/4 T protein powder. If you want moister then use 1 &1/2 T protein powder.
Instructions: Mix all dry ingredients (except for the choc chips) well, in separate cups mix wet ingredients (beat egg with this) then dump dry ingredients into wet and mix well (for 1-2 minutes, I use a fork). Spray 2 small pyrex ramekins (approx 1 cup each) with cooking spray and divide the batter between the 2 ramekins. Drop 5-6 chocolate chips on top of each (space them out a little). Microwave for 1 min. 20 seconds (this may vary based on your microwave). Flip upside down onto your plate, the chocolate chips create a nice melted chocolate layer on top and remind me of chocolate lava cakes. Serve with some cream cheese mixed with splenda, whipped cream, or all by themselves.
