I'm going out to a barbecue restaurant tonight. I checked out the menu and it's mostly sandwiches and saucy ribs, but I'll probably get the roasted chicken with vegetables and a salad with ranch. I'm not a big steak fan.

Dinner at Mr. P's - great downtown restaurant...I ordered grilled shrimp, fried oysters, collards and sauteed green beans, diet coke with lime. Yes, the oysters were indeed fried in a light batter; they were small, sweet, juicy perfect goodness.

I passed on bread and butter, hushpuppies, a cocktail and special homemade Valentine's Day desserts.

Dessert at home: Chocolate Chip One Minute Muffin from "Low Carb Friends" site topped with whipped cream. Not induction friendly, however.

I'm having grilled chicken breast marinated in italian dressing, a small salad and asparagus with butter on it as well as 2oz of swiss cheese.

Out for dinner - I had chicken fajitas without the tortillas and a side of steamed veggies with unsweet iced tea. Yum!

Low carb pita bread (7 g.) split into two "pockets" and stuffed with mayo, lettuce, tomato and peppered bacon. Yum. BLTs!

I ate roasted chicken with veggies and salad at the restaurant, but I wanted an "unhealthy food" fix, so I took 2 low carb tortillas (3 carbs each) and melted some cheese between them to make a quick quesadilla. Not really on-plan, but it would have been worse if I had eaten the garlic fries or the cake at the restaurant.

Default White Castle Cheeseburger Pie...

I love this recipe; it's so rich and delicious it doesn't take a lot to satisfy me. And I always have at least four or five more lunches or dinners. Good for my little budget!

I've had zucchini lasagna the past couple of days and I'm getting sick of it...I think I'll freeze the leftovers for another time and make some turkey burgers or a batch of chili.

YUM! Chicken Cordon Bleu from a box (Barber Foods) and collards. The chicken is ready to cook, 10 net carbs, 250 calories. It works for me...I hope.

Dinner at Crab Catchers on the waterway...favorite seafood dive. And it is a DIVE! Ordered grilled scallop sandwich (without the bun), 2 fried oysters and one hushpuppie. The waitress is used to it; she doesn't bat an eye.

Skipped the Blue Moon and had a diet coke with lots of fresh lime. Atkins peanut butter cups for dessert. They're excellent, so excellent that I'm not buying any more!

I had taco stuffed peppers. I altered the recipe a bit since I doubled it, added a bit more salsa and topped with cheese (and not sour cream), but here's the recipe: http://www.genaw.com/lowcarb/taco_stuffed_peppers.html

Oh and a salad!

Very good and very filling, I had one tonight and I have a small one for my lunch tomorrow!
