Default Pumpkin Question...Jersey Gyrl?

These yummy-sounding pumpkin recipes are killing me! I didn't think pumpkin was an Induction food, but I checked the Veronica Atkins Foundation site, and found this:

You can have 1 cup (measure cooked) per day of these vegetables, if salad does not exceed 2 or 3 cups. A few vegetables, such as spinach or tomatoes, that cook down significantly, should be measured raw. Some of the following vegetables are slightly higher in carbohydrate content than salad vegetables:

The chart lists pumpkin as one of those vegetables on the Induction foods list.

So, are we eating canned pumpkin on Induction? For those of us staying on Induction for a long time, it's serious business.

I'd love to hear from Jersey Gyrl on this one.

Hi Sandy

Yes, pumpkin is allowed on Induction. That means pure 100% pumpkin (canned or real)....NOT pumpkin pie mix in the can, which is full of sugar & other additives.

Yes! I eat pumpkin from day one no matter what the season is! I love it, and it's so good for us!
