I usually am not hungry in the evening. However, I try to eat something small just to say I have eaten. I found a really great recipe here for crustless quiche. I modified with my own ingredients (celery, jalepeno peppers, ect). These are made as individual servings in a muffin pan. They are PERFECT for that little something in the evening for ME. They are 1 carb and taste really awesome.
