what's in YOUR omlet?
Looking for new ideas. I usually have peppers onions bacon and cheese in mine. Sometimes 3 eggs sometimes 2. How about you?

Sometimes I'll saute sliced fresh mushrooms, peppers, onions and then pour egg mixture over...1 egg/ some egg whites (from carton). Sometimes i'll add lean ham and/or lean cheese.
I love putting the mushroom/pepper/onion omellette in a ww wrap with salsa.......to die for!!

I usually do 2 eggs and 1 egg white with a slice or two of canadian bacon and lf cheese. Yum.

I love eggs!
Tons of fresh parsley (lightly steamed), onions, cheese, salt and pepper....accompanied by ketchup! I can't have my eggs without ketchup! Most mornings I have a egg sandwich. 2 slices of Weight Watchers toast, slice of low fat cheese and a microwaved egg (45 secs)...also yummy!

Ketchup is a no-no on Atkins unless it is the low sugar (low carb) variety.

My favorite omelet:
2 cups raw spinach, steamed down to about 3/4 cup in the microwave; 2 slices chopped bacon, 1 BabyBel cheese shredded. Made with 2 lightly beaten eggs. I could eat this every day!!! Sometimes I substitute deli ham slices for the bacon.

My favorite omelet is made with taco meat, rotel, mexican blend cheese and topped with salsa & a dollop of sour cream I season the eggs (before cooking) with some southwest blend seasoning & chili powder.

I'm one of those people who love the taste of eggs! I just add a tiny bit of sea salt, that's it! I hope Sea Salt is not bad.. Uh Oh!
If I feel like I am hungry later on, I use JerseyGyrl's recipe for scrambled eggs that taste like french toast.

Lately my breakfast has been 2 eggs scrambled with about a tablespoon of cream cheese cut into small cubes. It gives a nice creamy taste to the eggs and is super fast.
The mexican omelette tempts me too!

Whats in my omlette? UMMMMM every thing but the kitchen sink!!!!!!!!
Lately I have been on a quiche kick. I got the basic recipe form the MM book. I do a double batch and freeze in 12 pieces. Talk about an easy breakfast. The last batch had 12 eggs, cup half and half 1 pound of spinach, 4 peppers, an onion, cheese, and bratwurst. MMMMMMMM
