Sugar free "sweet" pickles and low carb soup?

  • I absolutely love chicken salad and I was wondering if it is ok to add the sugar free (think they are sweetened with splenda) pickles to the salad during induction. I picked up the book The new diet revolution and have only gotten into it about 25 pages. Im finding it very interesting and think that a low carb diet is going to work for me. I love all the foods (except fish)listed. Also is there a "low carb" version of the weight watchers "all you care to eat soup"? Or does anyone know if it is already low carb? Thanks in advance.
  • The Splenda-sweetened pickles are fine for Atkins Induction, since they are basically only pickled cucumbers. Just make sure to count the appropriate carbs

    I'm not familiar with WW "all you care to eat soup" but, if you let me know whats in it, I'll help you figure out whether or not its low carb.

    Garden Vegetable Soup

    2/3 cup sliced carrots
    1/2 cup diced onion
    2 cloves garlic -- minced
    3 cups chicken broth -- or beef or veggie
    1 1/2 cups cabbage -- diced
    1/2 cup green beans
    1 tablespoon tomato paste
    1/2 teaspoon dried basil
    1/4 teaspoon dried oregano
    1/4 teaspoon salt
    1/2 cup zucchini -- diced

    1. In large saucepan, sparyed with nonstick cooking spray, saute carrot, onion and garlic over low heat until softened,
    about 5 minutes.

    2. Add broth, cabbage, beans, tomato paste, basil, oregano and salt; bring to a boil. Lower heat and simmer, covered,
    about 15 minutes or until beans are tender.

    3. Stir in zucchini and heat 3-4 mnutes. Serve hot.
