Default How do you like your hummus?

Most hummus recipes are basically the same, containing chick peas, tahini, garlic, lemon juice, and olive oil. The difference is usually in the proportions. Some people prefer a lot of tahini, others like more garlic. How do you prefer your hummus? Also, do you like added things like roasted red peppers? Any favorite recipes to share? I love hummus

I like hummus too! I tried this; a bit of work but it was worth it - very good. You could of course make it easy by just making the hummus part and buying your own flatbread:

you buy it and make it -
get a small can of chipotle peppers in the latino foods section and take a pepper and some of its sauce out and put it in the food processor or blender to puree. It's kind of a smoky hot.

I like mine with lots of garlic and almost no oil. In fact, the last few times I made it, I used a little FF chicken stock instead of oil and it turned out fine. I also don't like a ton of tahini, but enough that you can definitely taste it. This keeps the cals lower while not affecting the taste/texture too much.

I also make a mock hummus with 2 cans of white cannelini beans, the juice of 1 lemon, 1 clove garlic, 1/2 tsp sesame oil, salt, and pepper, plus chicken broth to thin to the right texture. Its quick and the sesame oil adds the sesame flavor of the tahini without having to buy a HUGE jar of the stuff and find other uses for it!

That looks like a great recipe, spinymouse, thanks

Great tip, mandalinn, I'll try that next time I make hummus

I bought a few containers of hummus last week at Kroger because it was on sale for a buck. The brand is Athenos and we had to throw it away. They whipped it! The texture was yucky

I love hummus with chipotle pepper as well. Trader Joes is excellent and very low in fat. I am now inspired to make it and use the white beans instead. Thanks for the idea. Sometimes when I pressure cook them some are softer than others, I will use those.

I like mine heavy on the garlic, lemon, and oil.

Can't stand the Athenos stuff

I always have to restrain myself from putting in too much garlic every time - I am a garlic fiend, but need to remember not everyone likes it in large doses. I usually don't stress about adding a tablespoon or two of olive oil - it is a healthy fat, and I think it really helps the flavor.

In addition to the traditional ingredients, I add some cumin, and sometimes a little jalapeņo chile. I'll have to try the chipotle addition - sounds right up my alley, and I have a can of chipotles that I opened for another recipe that I've been pondering how to use.
