Default Allergic to Eggs

Anyone in the same dilemna? I'm trying to think of a quick and/or portable breakfast for Phase 1 - not keen on messy leftovers. I really loved the mini-quiches until we realized I was allergic to eggs*. And most of the "egg substitutes" are made from egg white so they're not an option.




*and ginger, pears, plums, pineapple and yeast.

I am not a huge fan of breakfast foods. No eggs is hard though. I usually eat leftover chili or I make something that is designed to pull out of the fridge and heat up. Have you checked with a health food store to see if there is a sub for eggs that has no eggs in it? Trader Joe's might be a good bet. Our local health food store is very helpful with things like that.

At any rate, good luck. My issue is soy and so no frozen entrees or energy bars for me cuz they almost always have soy in them. I even have to find salad dressing without soy which is a real fun job so I sympathize with you. Although I think eggs would be harder.

Also check out the recipe boards for things made without eggs in the breakfast section.

ISG, you could try these egg substitutes to make the quiches
What is a good substitute for eggs?

Ener-G Egg Replacer - follow directions on box.
2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.

The starches /banana aren't good for phase 1 but perhaps the soy can be used.
