AnneWonders 10-17-2006, 11:21 AM The only dried beans I ever use are lentils and split peas both of which cook in some kind of reasonable time without a long soak. I use canned beans for everything else, and I usually try to rinse them first to get some of the salt off. Except for the sodium content, they are supposed to be as good as any other bean, just a lot more convenient.
