Apple Harvest Salad - 2 points

2 tablespoons chicken stock
1/2 teaspoon maple syrup
1 tablespoon cider vinegar
3/4 teaspoon Dijon mustard
2 tablespoons extra virgin olive oil
salt and pepper
1 large apple -- preferably Granny Smith
8 cups lettuce -- torn
2 tablespoons chives -- snipped

In a medium-sized bowl, whisk together chicken Stock, maple syrup, vinegar and mustard. Gradually whisk in oil until well combined. Season with salt and pepper. Add apples and toss to coat. Add salad greens and toss again. Garnish with chives.
