If you're recovering from an 8 year eating disorder, you should probably talk to a registered dietician and a therapist to come up with the correct eating plan for you.
As to what I eat, this is what I ate today:
B - 2 pieces of whole grain toast, natural peanut butter (thickly covered both pieces of the bread, did not measure)
S - Greek yogurt, 6 oz fresh raspberries
L - went to a burrito place. Had a burrito with rice, chicken, 2 big scoops of tomato salsa, a little salsa, tons of romaine and a side of guacamole
S - tall non fat latte, small biscotti
S - tangelo
S - cut up veggies (baby carrots, grape tomatoes, sugar snap peas, red pepper strips)
D - bowl of home made soup - tomatoes, leeks, chickpeas, spinach, 2 pieces of whole grain bread
S - banana, 2 tbs of pumpkin butter

Kylie,
i think that depends on your current weight and health status.

Your diet sounds healthy enough - I probably wouldnt have cookies every day but then thats just me lol. I'm a calorie counter and I like to make sure every single calorie is the best value for it's money!
And no...you can't really overdose on green beans...you should see some of the things I eat hehe. A tin of baby beets mixed with a 420gm tin of mixed beans as a salad for one!
A typical day for me looks something like this:
Breakfast: Small bowl of homemade muesli with low-fat yoghurt
Snack: 1 or 2 slices soy & linseed bread
Lunch: Salad (with 1/4 avocado, cucumber, mixed lettuce, grape tomatos, capsicum with fat-free sundried tomato & basil dressing)
Snack: Apple
Dinner: Smoked cod fillet with large green salad (same as lunch really)
Dessert - hehe, occasionally I'll splurge and on this occasion I did because my boyfriend brought over some apple pie so we had that with a scoop of low-carb icecream.
I was border-line anorexic myself for awhile, only pulled out of it because as I was learning to eat healthy I was also learning that my body needed the food I was denying to actually do it's thing...it was very sobering for me.
Do see a dietician if you're very concerned but you seem on a great track!

I think if you are recovering from an eating disorder you should definitely cosult a physician. But remember, everything is about moderation. A healthy diet and exercise will make you a stronger and healthier option. Good luck with your diet in the future.

Well I am losing but still weigh quite a bit more than you do so my calorie needs are higher. I would recommend you go here first to take a look at what your cal needs might be. I do also second their recommendation of seeing another nitritionist! That is very important as those of us here can only share what works for us.
Womens Nutrition Health Guide (http://nutrition.about.com/library/bl_nutrition_guide.htm)
Next you might want to start a fitday (fitday.com) so you can track your calories.
What I eat on a typical day:
Breakfast:
1 apple, 1 orange, half a grapefruit, 1 banana, sometimes I'll add strawberries or blueberries but i make this into a smotthie!
Lunch:
1 slimfast, 2 oz of tuna(in water) w/ 1 tsp of light mayo, 1-2 slices of whole wheat bread. I only do tuna maybe 1-2 a week, you have to be careful w/ the mercury! Or I have a little bit of peanut butter on the bread.
snack: 1 yogurt or 1 serving of total(no milk) or honey bunches of oats(no milk)
Dinner:
It varies. I try to do boneless skinless chicken breast with 1 cup of rice and brocolli and carrots 3 times a week. One nite I will have red meat like low fat roast or a steak with 1 cup of mashed potatos and a vegi.
The other nites I will have bean and cheese burritos w/ spanish rice, go easy on the cheese, sometimes use mozarella. Or once every few weeks we will have lasagna(in moderation) or chicken enchiladas(in moderation) . I usually have to have tacos at least once a week or I freak! lol With chicken though. I use olive oil to fry them in. Once a week I will go out to eat for lunch and I tell myself I can have whatever I want! I remember even last year that would mean a 1/4 cheeseburger with fries and onion rings and sugary soda and lots of ranch and thousand island! But I have since cut out sugartyy soda completely! It's just not worth it! If we go out to eat at a nice rest., I will have a salad w/ ranch, (which is like once a month) But I don't dip the fries in the ranch or thous. island no more and actaully seldom even get onion rings any more. Next time we go, I am going to see if hubby just wants to split the fries with me and our daughter who is 2. Last time when we went out to eat I gave her 1/4 of my burger and that shaves cals off right there!! Him and i and her had split one fry and 1 onion ring and even brought onion rings home for the other kids cause there were so many but next time I go I think the 3 of us will just share 1 fry.
Anyhow, good luck!
