I'm not posting an actual menu today, but I thought I'd start the new thread for the month.

Pearl, Joni, Lea Ann, Carmen, and everyone else here... we need your posts. Just seeing how everyone combines different exchanges, and the occasional good recipe really help everyone else.

Joni--apparently not enough--I'm still the same. I really drink it because I am too lazy to fix anything else.

the pizza is really good. Wasn't sure I'd like it b/c I am weird picky on chicken meat but this was good, white meat--nothing icky. I'm going to pick up the BBQ one today.

Lea Ann - I had the BBQ one Friday. It was pretty good, but I think the "Pitza" one I made was better. I liked the crust on this one, but I think the next time I buy it I will add my honey bbq sauce to jazz it up.

The last few days when I posted my meal (and wrote it in my plan book), I totally didn't follow it (e.g., I ate my dinner meal for lunch or ate raisins instead of fruit; ate my Lite for lunch, etc.). I'm going to fill my book out as I eat so my COD can see when and how I'm eating and they can better evaluate my progress. Maybe I need to plan in pencil..ya think?

Joni - I always write out the week ahead of time, but then I make sure to write any changes before each WI. But even if you mix stuff up, at least you have the basics planned. So you switch out a fruit, or you mix up lunch and dinner. You still have your meals planned, and I think it's much easier to substitute an exchange or two than to come up with a whole day's meals that morning, or on the fly.

The Vanilla Caramel Truffle is Lipton, and the Chocolate Caramel is Celestial Seasonings. I saw them at the grocery store and they were both on sale 2/$5 so I thought I'd treat myself. The Chocolate Caramel is a Chai tea, so it really tastes more cinamonny (like that word?) than chocolate, but it is still good. The Vanilla Caramel smells so good and tastes yummy too. I took Katie's suggestion and made that one Sunday night while I was curled up on the couch under a warm throw watching football. She's right... they are a great way to fill the tummy and it felt like a treat.

Joni - The salad is awesome. I make it with regular taco seasoning because that is what the family likes. I know it's higher in sodium, but I just make sure to do it when WI is not the next day. DD has regular tacos, and DH actually prefers the salad. By the way, I know I said this before, but I bought a salad chopper from the store, which is just a metal rectangle thing, and it chops everything and mixes the dressing so great that you really only need a little bit.

Broccoli with blue cheese dressing? Never thought of that. I'll have to try that one!

Cassi--actually it's going well so far. I hate to jinx myself but.... Monday was bad WI (at home) at 162.8 but I knew it was temporary from eating and sodium, Tuesday was normal at 161, then this AM was 159.4--so lets hope this TO will stick. I know I have to be REALLY REALLY good afterwards to keep it. I got hungry about 5:00 and drank some vanilla caramel hot tea and it really got me past the hump. Thanks for asking! I think most of it was water since I was up all night long!

Actually, I've been mulling over becoming a personal chef, but am not sure how to proceed with keeping $$$ coming in while the business starts.

I've seen two letters to the food editor in the local paper in the last month about senior citizens who are still independent looking for suggestions for someone to cook for them or other suggestions that are not frozen meals. I've been thinking about some way to cater to that crowd since there are a ton of them in Boca Raton/Palm Beach County and surrounding area. (Remember Seinfeld's parents at Boca Del Vista? My in-laws live in a retirement community in Boca and that's what I call it.)

Cassi - do you have 'dream dinners' franchises down there? We have 3 different companies up here, dinner me qickly and super suppers. You could do something like that. It is something that has peaked my interest. You provide the ingredients, recipe and baking instructions and your clients come in for seesions to assemble the meals to take home and freeze. It's fun.

Anyway - you could open up one of those, maybe a LAWL dinner place!

I just felt left out and had to chime in. Portion control is the big buzz these days....(think of all the 100 cal snacks). So, any business with the words "portion" or "control" will probably do well. I think Cassi is also living in a goldmine area and many of the seniors (or their kids who feel guilty cause they are not there taking care of them) would probably really appreciate a cooking service like hers!

OK... how about this?

Take the "meals to go" concept, but take it on the road to the numerous over 55 communities here. I'd have to figure out how to make it portable, but if I could come up with a cart or something that traveled on a trailer, I could go to the different clubhouses in each development. The ladies get to "cook" for the week and socialize. I cook the prep, like brown the ground beef, etc. and provide recipes. They sign up for the number of meals they want a few days before their scheduled day so that I can shop, and everyone's happy. I can offer 3/5/7 meal packages.

Now what to do about making it portable???

Commercial kitchen supply places probably have rolling cooler carts that you could put on a trailer and bring to the clubhouses. You might even be able to buy a used/refurbished one.

I guess you would also have to check with your county health department to see if there are any restrictions.

Potential red tape aside - sounds like a good idea.

I stupidly volunteered last year to be Hospitality Chair for a 2-day conference. I'm not toting my laptop around because my car is full of supplies, signs, "treats," etc. We have about 200 attendees and it's my job to keep them fed, hydrated, and happy.

My plan is to drink gallons of water, chew gum, and stay away from the "all-day break" tables (except in the morning when there is fruit). I have to go weigh on Saturday cause I didn't make it in this morning, so that alone is incentive to be good.
